The Final Flavour Impression
Finally, this is where you can make your judgement about the overall character of the wine. Swallow and then exhale slowly and gently through your nose and mouth. Is it light like water or full-bodied like milk? Do the different aromas linger? Are the flavours still playing upon your palate? A warm feeling in your throat would be a result of high alcoholic content. The longer it takes for the wine to let go, the better and more mature it is.

If, however, it leaves with barely a trace, then it is probably a young drink of inferior quality. Take note, too, of the flavour that outlasted all the others – perhaps oak, butter or fruit. This sensation can even last for a minute. Determining what flavour creates the final impression will make it easier for you to select the food that pairs well with the wine – be it meat, sea food, bread, cheese, etc.
